SINGAPORE-STYLE CHILLI PRAWNS

  1. 12 large tiger prawns (heads and tails left intact but bodies peeled and deveined)*
  2. Presentation:
  3. Finely sliced spring onion (scallions) to serve
  4. Aromatic:
  5. 1 cup roughly chopped mild red chilies
  6. 6 garlic cloves, roughly chopped
  7. 2 red Asian shallots, roughly chopped
  8. 2 tbsp finely chopped ginger
  9. Stir-fry sauce sauce:
  10. ¼ cup tomato ketchup
  11. 1 tbsp  fermented soybean paste* or miso paste
  12. 2 tbsp sugar and some water
  13. Others:
  14. 1 tsp sea salt
  15. 3 tbsp vegetable oil
  16. 1 tbsp corn flour (cornstarch) mixed with 1 tbsp of water
  17. 1 egg, whisked

MONGOLIAN BEEF

  1. 400g (14 oz) flank steak
  2. 2 tbsp vegetable oil
  3.  Presentation:
  4. 4 spring onions (scallions), cut into batons
  5.  Aromatic:
  6. 1 red onion, cut into wedges
  7. 4cm piece ginger, finely chopped
  8. 2 garlic cloves, roughly chopped
  9. 2 dried red chilies, roughly chopped
  10. Marinade:
  11. 1 tbsp soy sauce
  12. 1 tbsp Chinese Shaoxing wine
  13. ½ tsp baking soda
  14. 3 tsp corn flour (cornstarch)
  15. Stir-fry sauce:
  16. ¼ cup soy sauce
  17. ¼ cup chicken stock
  18. 3 tbsp brown sugar
  19. 2 tbsp Chinese Shaoxing wine
  20. Others:
  21. 1 tbsp corn flour (cornstarch) mixed with 1 tbsp water
Ham Fried Rice

Basic Sauce

  1. Vinegar-1 bottle
  2. Light Soysauce-3x 32. oz
  3. Oyster Sauce-1 can
  4. Hoisin Sauce-1/2 can
  5. Tomato Sauce-1/2 can
  6.  Sugar- 4x32.oz

My Signature Shrimp ( Prawns) and Cilantro Lime Rice

1. 10 large Prawns, head and tail sharp point remove, leaving shell attached.

2.  Sauteed Sauce. 2tbsp of oil, 1tbsp of sugar, 1tsp of fish sauce, pepper, a pinch of sail, a pinch of japan msg like 1tsp of sriracha sauce chili( the thick kind), 1 sweet shallop ( pink onion). Garnish with 1/4 slice of lemon, and a squeeze of lemon), cilantro, and green onion

The option to be added to the sautee sauce is 1tsp of butter and creme....and mince garlic and ginger....

3. Rice- 1cup of rice, 1tsp of melted butter, and 1tsp of Avocado oil, 2 anises, 5 cloves, 1 pinch of japan-msg, 1 pinch of celery salt, afterward, cilantro, 1tsp of oil, a squeeze of lemon, and black sesame, and smash cashew( peanut)

Mushroom
  • Fried mushroom
  • 1spoon + .5 spoon Hibachi Sauce
  • 1/3 spoon of slurry
  • cook until carmelize then add mushroom
Green Bean
  • Fried mushroom
  • 1spoon + .5 spoon Hibachi Sauce
  • 1/3 spoon of slurry
  • cook until carmelize then add mushroom
Fried Rice
  • Oil
  • 2 spoon of egg
  • shrimp
  • bean/carrot
  •  cook then add Rice ( chicken base + sesame oil)
  • 1/3 spoon of Sechuan wine

My- for 32 oz of Rice.  Oil, Egg, Chicken, Carrot, Onion, Rice, pinch Dashi, Pinch Salt, pinch garlic salt, pinch pepper, 1tsp butter, 1tsp minced garlic, 1/4 sesame oil, 1/2 soy sauce. garnish with green onion

TSO
  • Fried chicken
  • 1 small pot of TSO Sauce
  • Pour some on a tray
  • Add 1/4 spoon of oil
  • Add  1/3 spoon of chili
  • Add 1/4 spoon of garlic
Clams
  • 1 bag of clams, blanch in hot boiling water for 5 mins, then pour out
  • Sauce. 1 spoon of water, 1 spoon of hibachi sauce, 1 spoon of wine, 1/3 spoon of chili sauce, 1/3 spoon of garlic, 1 tsp of sugar, 1tsp of chicken base, 1 tsp of salt.  Cook for a couple of minutes. Add some to the plate
  • add green pepper, square onion, jalapeno
  • add the cornstarch slurry.  mix 30 second
  • add the cook clams for 30 sec

note if two bags then double the ingredient...

Shrimp Tosorito
  • Small shrimp blanch
  • Fried Sauce
  1. Butter-1/2 cooking spoon
  2. green pepper
  3. jalapeno
  4. chopped slice onion( not cube shape
  5. 1 tsp of sugar salt, chicken base, and paprika
  • add shrimp in and mix
Pepper Steak
  • 1 cooking pot of steak cooked in oil for 3.5 minutes
  • then add in green pepper, and square onion for 45 second-then set aside
  • Sauce
  1. 2 cooking spoons of hibachi sauce
  2. add 1/3 slurry then wok for 30 sec
  3. then add in cook beef and green pepper and square onion-wok-done
Buffalo Wings
  • 1/2 cooking pot of buffalo sauce-cook to boil, then add in fried chicken wings and drum stick then add 1/3 cooking spoon of slurry
Spaghetti Prepare
  • pan of water, add 2 cooking spoons of oil and add in food red color, then add in a bag of spaghetti
